Animal Kingdom offers an incredible show of Finding Nemo with amazing puppeteers! I find I get so caught up in the show I do not see the people only the characters. They come to live in front of your eyes.
I suggest using a Fastpass for the first show of the day. It gets you a great seat and out of the hot sun sooner. It is a large auditorium but can fill very fast. It is a show worth seeing!
